Menu, Week of 1/11



This is my third menu plan for the year! I am on track for menu planning again! I know, this is very exclamatory, but I have been really slacking on the menus, and suffering for it. I have missed the ease of a menu already in place, and made abortive attempts to reboot the habit for months with very little success. Now, though, I seem to be doing it, and I am super happy about that.

Another trick I used this week is creating a menu at the beginning of the week before, and adding things as they occur to me. Rather than sitting down on Sunday to create a menu from scratch, I add a meal here and there as it occurs to me that I would like to have a particular dish soon. Then I don’t have to really think about it all at once, and I am quickly jotting things down as I think of them.

Also, I am planning a few easy nights, so I don’t burn out. Sometimes just eating at home is good enough, saving me time and money.

Sunday: Chili, pasta for the kids

Monday: Spaghetti Squash with Kale and Italian sausage (I didn’t make this last week, so I am moving it out to this day)

Tuesday: Hamburgers

Wednesday: Buffalo pork chops (these were very popular last week!), buttered broccoli

Thursday: Crockpot Chicken Tikka Masala

Friday: Leftovers or sausage and eggs

Saturday: Doro Wat, with thighs instead of drumsticks, Ethiopian spiced cabbage, based on this recipe, but without the carrots, probably

Menu, Week of 3/23



I have been bad at menu planning lately, and I am suffering from it. I have still been cooking most nights, but it was a much more fraught experience, with lots of indecision and angst about how I could have made a better choice. I know that there are people who can look at what they have in the house and come up with a fantastic meal on the spot, but I am not really one of them. I mean, I can do it occasionally, but it is not a skill I can rely on.

I am diving back into the menu planning this week. My kids are relieved–I didn’t know they paid so much attention to the menu plans, but my daughter commented on how weird it has been not having a menu the other day. We’ve been eating late (see: indecision), and we ate out a bit more than normal. We didn’t go out a lot, but we did go to a restaurant one Wednesday for dinner, and my daughter thought that was just weird – “Who goes out to dinner on a Wednesday?” she asked. I guess I am teaching them good things about eating at home after all.

Sunday: Peanut coconut curry chicken

Monday: Chili spaghetti squash casserole, buttered broccoli

Tuesday: leftovers

Wednesday: Salmon casserole with noodles on the side for the kids

Thursday: Fathead pizza

Friday: Rosemary chicken, bacon wrapped asparagus

Menu, Week of 10/13



We are getting to my favorite weather of the year–still a bit warm mid-day, but crisp, and cool at night. I can crochet big blankets without contorting them in strange ways to keep the heat off of me. Warm, cozy cardigan sweaters come out and feel like a nice hug through the day, but are easy to take off when it is warm for a few hours mid-afternoon. It’s perfect stew and chili weather!

Sunday: Pork tenderloin, green beans, saladstew

Thursday: Bratwurst, buttered broccoli and cauliflower

Menu, Week of 9/15



Last week, I hit the beginning of school wall. I thought I was doing pretty well, even with my daughter’s cheerleading injury thrown into the mix, but then a pipe burst in my kitchen sink and I ran out of energy. I did cook dinner most nights, and we got the necessities down, but no menu planning, no blog posting, and not as much Parents’ Club organizing as I would have liked.

Cute story: Saturday night, I wasn’t feeling the cooking, but I wasn’t feeling the spending money either (did I mention I had to call a plumber? so expensive!), so I just made Italian sausages. I asked the boy how that sounded and he told me he didn’t want that. Why?

“Because that’s what we have when you are in a hurry, and I like the food you cook when you really cook.”

Aww! Makes a mother and chief dinner maker proud! We ate the easy sausages Saturday, but I promised I would cook real food on Sunday, which I did. And, that was a huge success, too! I made the dish a bit less spicy than the recipe called for, but still kinda spicy, and my daughter still liked it! In fact, she has recently started to enjoy most things that I make, even if they have a sauce! (I know, that is a lot of exclamation points, but I cannot overemphasize how exciting this is! She is a plain food lover of long standing, and I hate plain foods, as a general rule.)

Sunday: Pork with Paprika, Mushrooms and Sour Cream, gnocchi for the kids

Monday: Chili, whole wheat pasta for kids

Wednesday: Crackslaw

Thursday: Baked Chicken Thighs with garlic and lemon, sauteed zucchini

Saturday: hot wings, salad

I should also add that I made this menu on Sunday, but didn’t get it posted. I thought about skipping it again and being on time next week, but I need to dive back in or I will never have any menus posted again, I am sure. Okay, that is a bit melodramatic, but the general point is true–I need to get on this now, not keep procrastinating, ;).

Menu, Week of 1/1

This is not a resolution, I have been menu-planning every week for months now. However, there is something that feels so right about starting the new year with a good plan. I am a big believer in the idea that you should start the way you mean to continue. I plan to make this a big year–I want to do a couple of trips, at least one with the kids and possibly one or two conventions without them, I have a lot of work to be done in my yard, many household projects–and menu planning should help me to save the money to do these things. Of course I can plan cheap meals, but the big savings is in keeping me out of expensive restaurants! Now that the kids are getting older and eating all the time, a meal out with them is a significant expense.

Sunday: Chicken with 40 cloves of garlic, light and tangy slaw, chickpea flour quickbread, peas, fried potatoes

We had this last night, and I am pretty sure I am oozing a garlic scent today. I actually put a lot more than 40 cloves of garlic in my baking dish, and I may have eaten 40 cloves myself. So delicious!

Monday: Rosti with Bacon and Scallions, sauteed kale, blueberry smoothies
I am not actually a big bacon fan. I know, everyone thinks I am strange, but it seems too greasy to me. I am starting to come around a bit, if it is prepared right, and this doesnt have a huge amount of bacon. The kids are ecstatic at the prospect of me cooking bacon for them.

Tuesday: Red beans and rice, broccoli
An old favorite.

Wednesday: Rosemary Chicken with White Beans, spinach salad
One of the first non-plain foods the girl really enjoyed–and this is within the last year. We have had a tense childhood with that girl, because I have met very few plain foods I like, but she is all about plain foods, and has been vocally so since toddler-hood. Thank goodness she is starting to come around to more complex flavors.

Thursday: Red lentil Thai Chili, cornbread
I am having a vegetarian friend over for dinner, and we love curry. This take on chili might be too much for the girl, but I am hoping she will like it. I know that Andrea and I will love it, though, and at least there is cornbread, so the girl won’t go hungry!
