Menu, Week of 4/13

It is spring cleaning time. My kids are not happy with me, because I made a schedule with tasks for every day. I don’t know what they are complaining about, though, because they get a break when they go to their dad’s house! I have tasks every single day!

Mostly I am trying to get rid of as many things as possible. We are in no danger of being on the show Hoarders, but we do have way too many things. I am a big contributor to this problem, I know. I have so much trouble getting rid of books and yarn. I am making an effort with the books–I have a pile of books that I have never read that I have to give one more chance, and if I don’t like them, I have to get rid of them. I am trying to use up at least some of the yarn I have before buying more. These are fairly long-term projects, though.

For the rest of the house, we are getting rid of whatever we can. Clothes purged. Old toys donated. Papers recycled. It is helping, some. We need to get rid of a lot more, though. At least I can remove one decision from my days: I have a dinner plan.

Menu, Week of 1/5

I know, it isn't Monday anymore--the cold must have slowed me down!

I know, it isn’t Monday anymore–the cold must have slowed me down!

I didn’t plan for meals very well over the Christmas break. I did two nice meals on the two nights before Christmas, and then I ate leftovers for most of the rest of the week, since the kids were at their dad’s. I do cook sometimes when the kids

Monday, we had friends over and made a dinner of prime rib, mashed cauliflower and broccoli salad. I had never cooked a prime rib before, but it was so easy–I just threw it in a 300 degree oven for 2 ½ hours or so, then let it rest for 30 minutes and served. We had a meat and cheese tray for snacking before the meal, since I wasn’t certain when it would be ready, and I made some horseradish sour cream to serve with the steaks. Everyone loved it!

On Christmas Eve, we had my family over for dinner and the present exchange. For an appetizer I made bacon and avocado deviled eggs, and then we had pork roast, green beans sauteed with bacon and pickled beets.

This week I am getting back into my formal menu planning. Goodness knows, my budget can’t stand any eating out for awhile. Christmas time is fun, but expensive! Luckily, I stocked up at Costco and we should be good on food for a couple of weeks.

Sunday: Peanutty Coconut Curry Chickenpork with paprika

Monday: Pork with Paprika, Mushrooms and Sour Cream, gnocchi for the kids

Tuesday: Hamburgers

Wednesday: Bratwurst, cole slaw, buttered broccoli

Can I just add that it is freezing here? We got about 9 or 10 inches of snow and passed around 35 hours with subzero temperatures. My furnace couldn’t keep this old drafty house warm enough! It is not a bad furnace, it usually works fine, but it was struggling with the extreme cold. Now that we are back up into the balmy 20s, it is doing fine, so I suspect it isn’t the furnace breaking. I think I need some more thermal curtains, maybe some plastic around the windows, a space heater and some kind of insulation if it is going to get that cold again!

Menu, Week of 12/8

You know, I remember last time I did NaBloPoMo, I thought that that momentum gain would propel me into a lot of posting for the following month, even if not every day again. But I think that is one of the problems with the timing of the official big NaBloPoMo–the month after it is December which is full of all kinds of busy-ness. Everyone is so busy with parties and cleaning house and shopping and making gifts (in varying amounts, depending on the person, 🙂 ), that it is hard to keep up with anything, especially a relatively new habit. I will have to jump in on this earlier next year, so that next December I already have a deeply ingrained habit, I think.

One habit I am determined to keep going, though, is the menu planning. It is even more crucial when I am busy–on any given day of running around and projects, I don’t have time to make decisions about what to cook for dinner, and with gift buying and holiday entertaining, I don’t have the money to be buying pre-made food. The key words this week are fast and easy–even more than most weeks. I always like easy, but I usually throw in a few more involved dishes because I really do enjoy that when I have time. This week, I don’t have time!

Menu, Week of 9/15

Last week, I hit the beginning of school wall. I thought I was doing pretty well, even with my daughter’s cheerleading injury thrown into the mix, but then a pipe burst in my kitchen sink and I ran out of energy. I did cook dinner most nights, and we got the necessities down, but no menu planning, no blog posting, and not as much Parents’ Club organizing as I would have liked.

Cute story: Saturday night, I wasn’t feeling the cooking, but I wasn’t feeling the spending money either (did I mention I had to call a plumber? so expensive!), so I just made Italian sausages. I asked the boy how that sounded and he told me he didn’t want that. Why?

“Because that’s what we have when you are in a hurry, and I like the food you cook when you really cook.”

Aww! Makes a mother and chief dinner maker proud! We ate the easy sausages Saturday, but I promised I would cook real food on Sunday, which I did. And, that was a huge success, too! I made the dish a bit less spicy than the recipe called for, but still kinda spicy, and my daughter still liked it! In fact, she has recently started to enjoy most things that I make, even if they have a sauce! (I know, that is a lot of exclamation points, but I cannot overemphasize how exciting this is! She is a plain food lover of long standing, and I hate plain foods, as a general rule.)

I thought about skipping it again and being on time next week, but I need to dive back in or I will never have any menus posted again, I am sure. Okay, that is a bit melodramatic, but the general point is true–I need to get on this now, not keep procrastinating, ;).

Menu, Week of 8/4

mpm-chalkboardLast week was mostly successful on the menu. I actually made nearly everything on the menu, although not in order. I went out to eat one night and I didn’t get the paella made, but that is pretty good for a week with no kids, I think.

This week I have hungry kids back with me, so I need to feed them here at home–I really miss the days when we could go out and I could buy them cheap kids’ meals. Or sometimes they would eat free! Now it costs a small fortune to take all three of us out.

This is our last full week before school starts next Tuesday. We are already busy with friends and band camp and school prep, though. I am trying to get the house cleaned up (with help from the kids) to help the school year start off on an organized note, but no one wants to give up the last bits of end-of-summer laziness, ;).

The beginning of school is expensive, too–supplies, pictures, yearbook order, renting a flute, and on and on–so the menu is extra important. I need to make sure we are not spending all of our money on eating out, tempting thought that may be. That said, we are eating out tonight for our last night at the Muny!

This is going to be a strange week, as the boy has band camp in the evenings. He is at his dad’s this week, and his dad is having some conflicts with the time, so I am doing a lot of driving back and forth so that he can attend. I won’t have a lot of time to cook! I won’t really have kids around, so I can do quick and easy, though, so that helps.

Menu, Week of 7/21

I went to Costco this weekend, so my freezer is full of meat. So full, I had to leave some of the meat in the fridge to be used up this week. This should make menu planning easier, since I know what I have to work with, right?

Also, you’ll note that this menu is heavy on the sauteed zucchini–it is that time of year, lol.

Sunday: Sirloin steaks, sauteed mushrooms, green beans, cauli-rice, bacon avocado deviled eggsbaked chicken thighs

Monday: Lemon Garlic baked chicken thighs, sauteed zucchini, asparagus wrapped in bacon

Tuesday: Unstuffed cabbage casserole, cauli-rice

Wednesday: Bratwurst, sauteed zucchini, sauteed mushrooms, potatoes for the kids

Thursday: Zucchini and Italian sausage lasagna, based on this recipe, but probably without the eggplant and altered to be dairy-free, salad

Friday: Pork paprika with mushrooms and sour cream, broccoli

Saturday: Low-carb Reuben meatloaf, sauteed greens, asparagus
