I know, it isn’t Monday anymore–the cold must have slowed me down!

January is such a depressing time, budget-wise. Even though I really try not to spend too much at Christmas time, I always go a bit overboard. I don’t go totally crazy, loading up the credit cards, but I do spend enough to make January a bit tight, money-wise. I’ve been pretty good about cooking at home and not eating out, though, so I am feeling pretty good, so far.

At times like this, I am so glad that I bought that deep freeze last summer. We are still eating pretty well even though I don’t want to go to the grocery store, because I have lots of food on hand.

Also, I just have to add that I know it is Tuesday now. I had this menu plan completed yesterday, but somehow I wandered away from the computer before it got posted. I try to stay off the computer on Monday evenings, so that I am not on it ALL. THE. TIME. So, better late than never, right?

Sunday: Peanut Coconut Curry Chicken (I know, we have this a lot–what can I say, it is easy and I love it, 😉 )

Monday: Corned beef and cabbage, sauteed green beans and bacon ( added for the kids, who don’t like cabbage)

Tuesday: Sauteed shrimp with feta and lemon butter sauce

Wednesday: Chili Verde, low carb corn bread

Thursday: Pizza with almond flour crust

Friday: Crockpot Balsamic Chicken, sauteed green beans with bacon

Saturday: Bacon and eggs

Menu, Week of 11/10

I am going to a concert tonight! I am going to see Pink! My friend Billie is the greatest! Her husband gave her two tickets to see Pink as an early Christmas present, and she it taking me! Do you think I have used enough exclamation points? I am really excited!

All this excitement is making it hard to concentrate on boring things like menu planning, but I have to do something while I wait for the day to pass, right? Besides work, of course.

Sunday: Minted lamb burgers with feta cheese and avocado, steamed broccoli, cole slaw

Monday: Out with my friend before the concert

Tuesday: Coconut Shrimp soup, sauteed mushrooms, onions and asparagus

Wednesday: Pizza, salad

Thursday: Bratwurst, sauteed cabbage and bacon

Menu, week of 9/22

Last week went pretty well, menu plan-wise. We didn’t follow the plan exactly, but it was pretty close. I made something different than what was planned two nights, and it turned out that I didn’t have leftovers for Friday, so I went out with a friend instead. Of course, I did post my plan late, so I knew what I was working with for the beginning of the week, but it was still a good week.

This week we are settling into the school year routine, and I feel almost like I can handle life again. Here look, it is actually Monday when I am posting my menu plan Monday post. I did a big shopping trip to Costco, too, so we have plenty of food–thank goodness for the freezer I bought last month. I’ve only had it about a month and I already can’t imagine how I managed without it!

This week is not too crazy, unless I am forgetting something, ;). I have an event to attend during the workday that is near my house tomorrow, so I will work from home an extra day. That always helps with getting things done, especially now that I am taking a pottery class on Tuesday evenings. I don’t think I have anything else to do in the evenings this week besides that class, though–nothing that will take me out of the house, at least. There are always plenty of things to be done.

Sunday: Takeout at a friend’s house

Monday: Sirloin steak with shrimp scampi, roasted green beans and mushrooms, steamed broccoli

Tuesday: Bratwurst, spinach salad

Wednesday: Garlic Pork Roast in the slow cooker, sauteed spinach, buttered broccoli, applesauce for kids

Thursday: Bacon cheeseburger meatloaf, buttered broccoli

Friday: Pizza–meatza for me, chickpea flour crust for kids

Saturday: Leftovers

Menu, Week of 8/4

mpm-chalkboardLast week was mostly successful on the menu. I actually made nearly everything on the menu, although not in order. I went out to eat one night and I didn’t get the paella made, but that is pretty good for a week with no kids, I think.

This week I have hungry kids back with me, so I need to feed them here at home–I really miss the days when we could go out and I could buy them cheap kids’ meals. Or sometimes they would eat free! Now it costs a small fortune to take all three of us out.

This is our last full week before school starts next Tuesday. We are already busy with friends and band camp and school prep, though. I am trying to get the house cleaned up (with help from the kids) to help the school year start off on an organized note, but no one wants to give up the last bits of end-of-summer laziness, ;).

The beginning of school is expensive, too–supplies, pictures, yearbook order, renting a flute, and on and on–so the menu is extra important. I need to make sure we are not spending all of our money on eating out, tempting thought that may be. That said, we are eating out tonight for our last night at the Muny!

Sunday: Dinner at a friend’s house

Monday: out

Tuesday: bratwurst, sauteed cabbage and bacon

Wednesday: Burger stroganoff over zucchini pasta

Thursday: Pork with Paprika, Mushrooms and Sour Cream, gnocchi for the kids, broccoli

Friday: shrimp scampi over steak, sauteed mushrooms, green beans

Saturday: Low carb Paella

Menu Plan, Week of 1/7

I have been making some menus in the last several months, but I have not gotten myself together enough to actually post them. I think I am making my menu planning too difficult and I need some kind of theme. Problem is, I don’t like feeling constricted, so the idea of a Monday = chicken, Tuesday = meatless type menu does not appeal, and neither does a Monday = comfort foods, Tuesday = rice, etc. Maybe if I made a list of categories to hit each week, but didn’t assign them to a day, that would help.

Monday: Shrimp and pea risotto, salad

Tuesday: Shredded chicken with honey hot sauce, frozen potato/green bean/mushroom mix

Wednesday: Leftovers

Thursday: Chicken and veggie stew

Friday: Pepperoni pizza, salad, baby carrots

Saturday: Lentils and rice with carmelized onion tahini sauce, sauteed veggies and kielbasa

Maybe I am just overthinking menus, and I need to let go of the idea that I will be able to come up with the “perfect” plan. How do you menu plan quickly?

Menu, Week of 4/15

Last week, I didn’t make a menu plan, and I didn’t do much grocery shopping, but we still ate at home every night. Go me! We ate a lot of chicken–chicken tenderloins are so convenient, and easy to defrost even at the last minute–but I think we ate pretty well overall.

Here is what we had, not in order:

Chicken in mustard cream sauce, brown rice, edamame

Curried Stir-fried noodles and veggies

Chicken risotto/paella

turkey/goat cheese/spinach burgers, roasted veggies, quinoa salad

Italian sausages, quinoa salad, steamed veggies

Scrambled eggs and hashbrowns

So, not as much chicken as I was thinking. We are starting this week with two chicken dishes in a row, though, and the chicken in mustard cream sauce was Saturday night, so we are on a chicken run. I could rearrange things, but I want to make the inside out chicken cordon bleu tonight while my mother is over, so it can’t be helped.

Sunday: Curried chicken and rice soup

Monday: Inside out chicken cordon bleu, salad, steamed veggies, rice pudding

Tuesday: Chili, cornbread, sauteed mustard greens

Wednesday: Moo Shu Pork Casserole, Asian slaw

Thursday:  Rosti with Bacon and Scallions, scrambled eggs, fruit smoothies

Friday: Curry coconut shrimp, red lentil dal, rice

Menu, Week of 10/31

Monday: Pork Tenderloin with Artichokes and Capers, mashed potatoes, roasted brussels sprouts

This is my attempt to cram some nutrition into my kids before they head out for the candy-filled bacchanalia that is Halloween night.

Tuesday: Pumpkin and Shrimp Curry, brown rice/quinoa

My daughter likes shrimp, but my son doesn’t. My son likes curry, but my daughter doesn’t. I like all of the ingredients in this recipe. Overall, it is a better idea to have this on the night the kids are at their dad’s house.

Wednesday: Scallop risotto

The girl is cooking this night. I love it when she cooks!

Thursday: Salmon noodle casserole, broccoli

I am not really sure about this one. I am thinking about cutting out wheat for a bit to see if I might be having some issues with gluten. Although, if I cut it out all week, and I feel better, this might be a good test to see if wheat is the culprit.

I have a fair amount of salad stuff that I want to use for lunches. We are doing a lot of oatmeal for breakfasts, plus hash browns, sausage and eggs. I know, that sounds heavy, but we don’t do it all at once, and the sausage won’t be every day. I am trying to make sure we get a good filling breakfast to start the day, though.
