Menu, Week of 3/23

I have been bad at menu planning lately, and I am suffering from it. I have still been cooking most nights, but it was a much more fraught experience, with lots of indecision and angst about how I could have made a better choice. I know that there are people who can look at what they have in the house and come up with a fantastic meal on the spot, but I am not really one of them. I mean, I can do it occasionally, but it is not a skill I can rely on.

I am diving back into the menu planning this week. My kids are relieved–I didn’t know they paid so much attention to the menu plans, but my daughter commented on how weird it has been not having a menu the other day. We’ve been eating late (see: indecision), and we ate out a bit more than normal. We didn’t go out a lot, but we did go to a restaurant one Wednesday for dinner, and my daughter thought that was just weird – “Who goes out to dinner on a Wednesday?” she asked. I guess I am teaching them good things about eating at home after all.

Sunday: Peanut coconut curry chicken

Monday: Chili spaghetti squash casserole, buttered broccoli

Tuesday: leftovers

Wednesday: Salmon casserole with noodles on the side for the kids

Thursday: Fathead pizza

Friday: Rosemary chicken, bacon wrapped asparagus

Menu, Week of 1/19

January is always a bit of a downtime for me. Maybe it is because I run around like a crazy person before Christmas. Gee, you think? Hopefully I will do better this year, starting projects early, but it always seems there are plenty of projects coming up throughout the year.

This past week I have been busy with work and the kids, but we mostly ate at home. On Wednesday, I got home to find that there was a school program for my youngest starting at 6:00 and lasting until 7:30. It was 5:45 at the time, so we ended up picking something up after the event. Other than that, though, I cooked, so it worked out pretty well.

This week I am planning on getting more done besides work and dinner. I am cooking some extra food for a friend who had surgery last week. I want to do one Christmas project (yet to be determined, but probably something small). I want to finish the Creeper blanket I am crocheting for one of my son’s friends. I would like to do more, but I had better stop if I want to actually make my goals, ;).

Sunday: Cheeseburgers

Monday: Fathead pizza

Tuesday: Sauteed scallops and langostinos, sauteed cabbage (both sauteed in butter)

Wednesday: Paleo chicken taco bowls – the kids may eat the food separately, but I will enjoy it all together!

Thursday: Morroccan egg tagine, buttered broccoli

Friday: Spinach and goat cheese stuffed chicken, green beans sauteed with bacon, sauteed artichoke hearts

Saturday: Steak, cauli-rice, roasted asparagus and cherry tomatoes

Menu, week of 9/22

Last week went pretty well, menu plan-wise. We didn’t follow the plan exactly, but it was pretty close. I made something different than what was planned two nights, and it turned out that I didn’t have leftovers for Friday, so I went out with a friend instead. Of course, I did post my plan late, so I knew what I was working with for the beginning of the week, but it was still a good week.

This week we are settling into the school year routine, and I feel almost like I can handle life again. Here look, it is actually Monday when I am posting my menu plan Monday post. I did a big shopping trip to Costco, too, so we have plenty of food–thank goodness for the freezer I bought last month. I’ve only had it about a month and I already can’t imagine how I managed without it!

This week is not too crazy, unless I am forgetting something, ;). I have an event to attend during the workday that is near my house tomorrow, so I will work from home an extra day. That always helps with getting things done, especially now that I am taking a pottery class on Tuesday evenings. I don’t think I have anything else to do in the evenings this week besides that class, though–nothing that will take me out of the house, at least. There are always plenty of things to be done.

Sunday: Takeout at a friend’s house

Monday: Sirloin steak with shrimp scampi, roasted green beans and mushrooms, steamed broccoli

Tuesday: Bratwurst, spinach salad

Wednesday: Garlic Pork Roast in the slow cooker, sauteed spinach, buttered broccoli, applesauce for kids

Thursday: Bacon cheeseburger meatloaf, buttered broccoli

Friday: Pizza–meatza for me, chickpea flour crust for kids

Saturday: Leftovers

Menu, Week of 8/11

School starts tomorrow! I thought I was all prepared for this, but I woke up at 7:00 this morning and realized that not only do I need to make a quick run for lunch supplies, I didn’t get pocketed dividers for the boy’s binder. Oh, and I need to go pay for the bus! Plus my mom is coming over for dinner and I have that pesky job taking up much of my day. Thank goodness for lunch breaks and relatively easy dinners

Sunday: I went out with a friend, the kids had Italian sausages

Monday: Steak with shrimp scampi on top, sauteed mushrooms, sauteed broccoli, yellow squash and onions, cauli-rice (I know, this has been on my menu for the past two weeks as well, but I just couldn’t make it happen. It *will* happen tonight, though, as the steaks are already thawed.)

Tuesday: First day of school! The kids are going to their dad’s and I am taking a pottery class, so this will be leftovers or a quick omelet for me.

Wednesday: Bratwurst, steamed broccoli

Thursday: Low carb Paella–another dish I just haven’t made happen yet.

Friday: Just me again, so either leftovers or an omelet again

Saturday: I am leaving this one open–I think I am going to a friend’s house, but if not, I can make a plan when I get there.

Menu, Week of 5/19 (A Retrospective)

I started to plan ahead this week, but I didn’t really make it. I think we did pretty well on eating, though, so I want to document what we did eat for future reference.

Also, I broke out the measuring tape earlier in the week. Wow, was I surprised at the results! In two weeks, I went down in size in nearly every category, starting with a full inch in the waist! For some reason, I went up half an inch in the hips, which makes me think I must have done that measurement wrong to begin with, but overall I lost over 5 inches (bicep, forearm, thigh, calf, waist, neck and chest). Again, I have to say wow!

Oh, and I did a non-fasting cholesterol test at the end of last week–overall cholesterol is only 130, with triglycerides at 75. My HDL is a little low, but I am hoping to turn that around soon. I am amazed my numbers were so low after eating high fat and low carb for over two weeks, though! I ate bacon, eggs and cheese for breakfast about three hours before that blood draw, too.

I didn’t exactly follow my menu the week before because things got a little busy, but I did pretty well and I was happier with what I was eating. Tuesday I ate leftovers instead of cooking, and Wedesday I ended up with only 30 minutes at home before I had to run out the door, so I ended up eating hard salami and pickles, but overall the better planning really helped me this week. I found the food less boring, and I spent a little less money.

I have to say, the change I am having trouble adjusting to is keeping enough meet and especially eggs on hand! We have been eating a lot more eggs for breakfast, and it doesn’t take long to go through a dozen eggs with 3 people eating them. My monthly Costco run is going to look a bit different this time than it has in the past, although I have been getting more meat for a while now–it is just such a good deal to get meat there rather than the grocery store.

Sunday: I had the boy only after the Boy Scout camporee, so we went on a mother/son date at Bandana’s. I had beef and pork, with green beans and cole slaw.

Monday: Leeks, greens and goat cheese fritatta, topped with smoked salmon, salad, steamed broccoli

Tuesday: It was payday, so I ended up going out–NY strip steak, green and wax beans, asparagus soup and just a few pieces of sweet potato hash

Wednesday: sirloin steak, salmon, sauteed spinach, cauli-rice, sauteed mushrooms

Thursday: Last day of school, so we had to work around the end of year party. We ate some leftovers before heading to the party, then the boy went and had pizza with his friends (the girl was off with her dad), and I went out for a burger topped with shrimp and a cajun spice butter sauce with no bun and cole slaw on the side. I also had a few hot wings after we confirmed that there was no breading on the wings.

Friday: This time I had the girl and one of her friends while the boy was off at his dad’s. We went to a local Chinese buffet place that has crablegs on Friday nights, dipped in delicious butter. I had salmon, a bit of roast beef, green beans and butter mushrooms, too, along with a chicken skewer and one BBQ rib.

All in all, still a bit too much eating out, but I think it is getting better. The girl and I really liked the cauli-rice, but the boy was not impressed. I think it might be better for him as a base for other dishes, but he is just not a cauliflower fan.

The kids are both off to their dad’s now until Friday, when they will come home to help pack and get ready to head out on vacation on Saturday. I need to do some planning ahead for myself this week and for the food we are taking for the first part of the trip, which will be a couple of days of camping. I am thinking it might be good to head to Costco today, too.
